Abbotsleigh Citrus Lemon Slice

Mrs Abbotsleigh Citrus’s Yummy Lemon Slice


1 cup plain Flour

½ cup soft butter

¼ cup icing sugar


2 Eggs

2 tbs juice from Abbotsleigh Lemons

1 cup sugar

2 tbs plain flour

½ tsp baking powder

Grated rind of 1 Abbotsleigh lemon



  1. Line a baking tray (approx 7 inches by 11) with baking paper. 
  2. Sieve then mix all of the base ingredients together.
  3. Spread the base evenly into the baking tray and bake at 170 degrees celsius (or 150 degrees if you have a fan forced oven) for 10 minutes.
  4. Blend all of your filling ingredients together and pour over the base.
  5. Bake in the over (no need to change the temperature) for 15 minutes. When you take the slice out of the oven, the topping should appear set but not brown.
  6. Leave slice in tray to cool for 10 minutes then transfer to a wire rack to cool completely.
  7. Once cooled, sprinkle with some icing sugar and enjoy!
