Fruit and Veg Slice


Ingredients:

  • 1 cup self-raising flour
  • 1 tsp cinnamon
  • a pinch of salt
  • 1 zucchini, 1 carrot, 1 apple – all grated
  • 1 cup sultanas, chopped
  • 1 cup dried apricots, chopped
  • a handful of dried cranberries (or to taste), chopped
  • ½ cup chopped hazelnuts (or other nuts you prefer)
  • 2 eggs
  • 1 tsp vanilla essence
  • ½ cup olive oil (I used grapeseed oil)

Method:

1. Sift flour, cinnamon and a pinch of salt into a large bowl.
2. Process sultanas, dried apricots, cranberries and nuts in a food processor until chopped to desired size.
3. Grate zucchini, carrot and apple.
4. Add grated and chopped ingredients to dry mix.
5. Whisk eggs, vanilla and oil and add to dry ingredients.
6. Place in a 20cm x 20cm cake tin and cook for 1–1¼ hours in a 180˚C oven.

When it cools, slice it up and enjoy!
